▌奶精:即植脂末
買奶茶時,如果看到店員用粉末沖調(diào),大概率用的就是植脂末。植脂末的本質(zhì)是糖和油的組合,攝入過多容易造成體重超標(biāo)或者肥胖,有些植脂末中還可能含有一定量的反式脂肪酸,對心臟不利。
Non-dairy creamer, essentially hydrogenated vegetable fat powder, is widely used. If you see staff preparing milk tea from a powder, it's likely non-dairy creamer. This product is fundamentally a combination of sugar and oil. Excessive intake can easily lead to weight gain, with some types of non-dairy creamer possibly also containing trans fatty acids, which are harmful to heart health.
▌基底乳
越來越多的奶茶店用鮮萃、輕牛乳、絲絨等詞匯,搭配茶風(fēng)味的描述,組合成各種創(chuàng)新的奶茶名字。
一般來說,沒有明確寫“只有牛乳(或鮮奶)”的奶茶,大概率用的是基底乳。其乳成分可能只占3%至5%,蛋白質(zhì)和鈣很少,脂肪含量是牛奶的5到8倍。
More and more milk tea shops are using terms like fresh extraction, light milk, and velvet, combined with tea flavor descriptions, to create innovative names for milk tea products. Generally, unless explicitly stated as containing only milk or fresh milk, the beverage likely uses a base milk. The dairy content in such bases may only account for 3 to 5 percent, offering little protein or calcium, while the fat content can be 5 to 8 times higher than that of fresh milk.
▌厚乳
厚乳是一種濃縮牛奶,質(zhì)地濃稠、口感醇厚,營養(yǎng)價值也較高。
但如今不少奶茶店用的是調(diào)制厚乳,在濃縮牛奶里加了煉乳、淡奶油、白砂糖和乳化劑,風(fēng)味更濃,糖和脂肪含量也更高。有些基底乳也被包裝成厚乳,如“生酪厚乳”“大米厚乳”,成本低,營養(yǎng)價值不高。
Thick milk is a type of concentrated milk with a rich texture and high nutritional value. However, many milk tea shops now use formulated thick milk, which includes added condensed milk, light cream, white sugar, and emulsifiers. This enhances the flavor but also increases the sugar and fat content. Some base milk products are also marketed as thick milk — these are low-cost and offer little nutritional value.
▌厚椰乳
它和乳制品沒關(guān)系,靠豐富的脂肪帶來醇厚口感和椰香,熱量較高,不利于心血管健康。
Thick coconut milk is not a dairy product. It relies on high-fat content to deliver a rich texture and coconut aroma. This type of milk alternative is also high in calories and may negatively impact cardiovascular health.
總而言之,點奶茶時,盡量避免使用奶精、基底乳的品類。

喝奶茶,怎么辨別“科技與狠活”?
奶茶是很多人喜愛的飲品。日常生活中,如何識別奶茶里的食品添加劑?如何科學(xué)飲用奶茶?
針對這些問題,記者采訪了重慶市食品藥品檢驗檢測研究院副院長陳世奇。
“科技與狠活”作為網(wǎng)絡(luò)流行語,用于調(diào)侃或諷刺某些食品生產(chǎn)或加工過程中過度使用添加劑、人工合成技術(shù)等手段的現(xiàn)象。由于不少消費者對其中的食品添加劑心存疑慮,所以這一爭議也長期存在于奶茶界。
“奶茶中,并非所有添加劑都是‘科技與狠活’。只要在國家標(biāo)準(zhǔn)規(guī)定的范圍內(nèi)使用,食品添加劑是安全的。但如果超范圍、超劑量使用添加劑,就可能危害健康。例如,超量使用色素,可能會損傷神經(jīng)系統(tǒng)和消化系統(tǒng);違規(guī)添加非食用物質(zhì),會嚴重威脅消費者的生命健康。”陳世奇說。
How can one identify whether additives have been used in milk tea? According to Chen Shiqi, deputy director of the Chongqing Institute for Food and Drug Control, "As long as food additives are used within the limits set by national standards, they are safe. However, exceeding the allowed scope or dosage may pose health risks."
如何識別奶茶里的“科技與狠活”?陳世奇給出了“一看、二觀、三聞”的方法。
Daily judgment of whether excessive additives have been used in milk tea can be assessed in three steps.
▌一看標(biāo)簽
預(yù)包裝奶茶的包裝上,必須清晰標(biāo)注品名、配料表、生產(chǎn)日期、保質(zhì)期等信息。配料表是關(guān)鍵,顯示了奶茶是否有食品添加劑等。
First, check the label. Prepackaged milk tea must clearly display the product's name, ingredient list, production date, and shelf life. The ingredient list is key, as it indicates whether food additives are present.
▌二觀色澤和質(zhì)地
用鮮牛奶和茶葉制作的奶茶,顏色是自然的淺棕色或米色,質(zhì)地均勻。顏色過于鮮艷,如呈現(xiàn)亮粉色、鮮綠色等不自然的顏色,很可能添加了過量色素;如果奶茶看起來分層明顯或者有沉淀,那可能是品質(zhì)出現(xiàn)了問題。
Second, observe the color and texture. Milk tea made from fresh milk and tea leaves has a natural light brown or beige color and an even texture. Unnaturally bright colors, such as vivid pink or green, may indicate excessive use of colorants. If the milk tea appears layered or has sediment, it may be of poor quality.
▌三聞氣味和嘗口感
優(yōu)質(zhì)的奶茶有濃郁的奶香味和茶香味。如果過于甜膩,可能是添加了過多的甜味劑;如果有異味、酸澀味或苦味,可能與原料質(zhì)量不佳、添加劑超標(biāo)有關(guān)。
Third, test the smell and taste. High-quality milk tea has a rich aroma of milk and tea. Overly sweet or cloying flavors may suggest excessive sweeteners, while off-flavors, sourness or bitterness could be related to poor-quality ingredients or excessive additives.
平時生活中,如何科學(xué)飲用奶茶?
日常生活里如果控制不住自己喝奶茶,可以通過這幾個方式科學(xué)飲用。
In daily life, it's important to control milk tea consumption, monitor sugar intake, pay attention to the type of dairy used, and be mindful of caffeine content.
▌控制飲用量
奶茶中通常含有較高的糖分、脂肪和咖啡因,長期過量飲用會增加身體負擔(dān)。建議每天飲用奶茶不超過一杯,且盡量選擇小杯裝。
▌關(guān)注糖分攝入
很多奶茶為追求口感,添加了大量糖分,長期過量飲用易引發(fā)蛀牙等。點單時,可要求“少糖”或“無糖”,也可以選擇添加新鮮水果來增加自然甜味。
▌留意奶制品選擇
鮮奶富含蛋白質(zhì)和鈣質(zhì),相對健康;而奶精可能含有反式脂肪酸,長期食用不利于心血管健康。
▌注意咖啡因含量
部分奶茶為達到提神效果,加入較多茶底或咖啡成分。過量攝入咖啡因會引起失眠、心悸等問題,敏感人群應(yīng)選擇低咖啡因或無咖啡因的奶茶。
